Scrambled Egg & Sausage Pie

Good experimental dinner tonight. We had some spicy turkey bratwurst in the freezer, not enough to make a meal on their own, but enough to do a bit of experimenting with the pie crust left over from Pie Day festivities.

Ingredients:
6 eggs
1 1/2 spicy bratwurst
1 pre-made pie crust

The prep work was fairly simple. Take the pie crust out of the fridge, de-case and brown up the leftover brat-and-a-half while the pie crust warms up to room temp and the oven heats up to 350°. Lower the temperature of the pan to low, put the crust in an 8″ pie pan and put the crust in the oven. While it’s cooking add 4 well scrambled eggs to the sausage in the pan. Let them all cook for about six minutes, then mix the scrambled egg and sausage mixture with two uncooked eggs and pour it into to the crust. Return the mixture to the oven for 10 to 12 minutes (less if you like your eggs a little less well cooked than I do).

Optional: Add cheese slices to top of pie and turn oven to broil until cheese is melted. Keep an eye on the crust so it doesn’t burn…
