Spicy Black Bean Burger

We’re eating healthy here in the land of Quirk. Calories are being counted, fat is being watched and the whole dining paradigm is being examined with an eye for trimness. We’ve got six months to get into Tuxedo and Wedding Dress shape and the Diet has become an important part of our lives.

Around the holidays, we got a copy of “The Idiot’s Guide to Nutrition.” First off, I kind of object to the whole “Idiot’s Guide” idea. I’m not that fond of the “Klutz” or the “For Dummies” series either. If someone is trying to improve themselves I think it’s kind of counterproductive to start out by insulting them. It’d be like having “The Completely Worthless Groveling Worm’s Guide To Improving Self Esteem.”

Anyway, my Fiancee has been looking through it for guidelines on caloric intake, healthy fat levels and nutritional completeness. I’ve been a bit more relaxed about the whole thing. She can pick the menu, so long as I get to do the actual cooking.

I’ve ranted before about how I enjoy cooking. Making cooking healthy is sometimes just a simple matter of changing the ingredients around a bit. Use turkey instead of beef. Broil instead of frying. Little things like that. Tonight’s meal, for example, was basically burgers, with big juicy onions, some cheese and toasted onion rolls as buns. The only change was the substitution of Morningstar Farms Spicy Black Bean Burgers for meat.

If you haven’t had these, go out and get a package. Inside the green cardboard box are two packages, each with two little frozen pucks made from beans, corn and spices. They’re like tiny disc-shaped frozen burritos. Thaw them out, cook them up, and it’s like having a taco sandwich. My fiancee had hers with sauteed mushrooms in red wine sauce, but I’m more a fan of salsa and cheese.

Either way, they were darn tasty.
